After the scan the software shows all stored data files. Tick the folders and files that matter or clear the rest, and the backup covers only that selection.

Data preview
The preview shows data with advanced filters on top, so a wrong folder or a missing file is spotted before the export begins.

Email addresses go to CSV on their own, phone numbers come from the address book, and attachments save at any size.
